Watercress Salad
Serves 6
6 cups watercress, stems removed
2 cups jicama, cut into strips
3 oranges, peeled and in segments
Salt and Pepper to taste
Coriander Vinaigrette:
2 Tbsp coriander seeds
1/2 cup virgin olive oil
1/4 white wine vinegar
1/2 bunch of cilantro, chopped
1 tablespoon shallot, chopped
Salt and Pepper to taste
Make the Vinaigrette:
Toast the coriander seeds in a skillet over low heat for about 3 minutes
Set aside
Place the seeds, oil, vinegar, cilantro, shallot, salt and pepper in a blender
Blend until mixed well
Make the Salad:
Place watercress, jicama slices, orange pieces and Vinaigrette in a bowl and toss
until the dressing coats the salad
Add salt and pepper to taste
