6 medium potatoes
Water
dash salt
3 Tbsp oil
1/2 tsp salt
Dash black pepper
1/2 tsp dried oregano
1/2 tsp thyme
Dash cayenne pepper
1/3 cup grated parmesan cheese
2 Tbsp grated cheddar cheese
Wash and scrub unpeeled potatoes. Cut each potato in half lenghtwise. Then cut again into
wedges
Boil wedges for 5 minutes in salted water
Spread potato wedges in a single layer on a greased baking sheet
Sprinkle with oil, spices and herbs
Bake at 425 for 25 minutes
Sprinkle with the two cheeses
Bake at 425 for another 10 minutes or until cheese is melted and potatoes are slightly golden
