Fried Rice with Vegetables
1 carrot, cut into julienne strips
1 leek, cut into julienne strips
1/2 cup snow peas, cut into julienne strips
2 tsp peanut oil
2 cloves garlic, minced
2 cups cooked brown rice
juice and pulp from one lime
1 tsp honey
1/4 tsp hot pepper sauce
1 tsp peanut butter
2 Tbsp fresh basil OR mint, minced (optional)
In a strainer, place carrot, leaks, and pea strips. Pour boiling water over the vegetables
for about 10 seconds. Set vegetables aside
In a large skillet, heat oil over medium heat
Add vegetables, garlic and rice and saute about 4 minutes, until hot
In a small bowl, whisk together the remaining ingredients
Add to rice mixture and mix well
Serve hot
