Barley Pancakes
4 servings

1 and 1/3 cups whole wheat pastry flour
1 and 1/2 tsp baking powder
3/4 cup cooked barley
1/2 cup skim milk
1/4 cup mashed banana
2 egg whites
2 Tbsp maple syrup
1 tsp oil

In a medium bowl, sift together the flour and baking powder. Stir in the barley
In a small bowl, whisk together the molk, banana, egg whites and maple syrup
Pour the milk mixture into the flour quickly. Don't over-mix

Heat a well-seasoned cast-iron skillet or non-stick frying pan over medium-high heat.
Add half of the oil
Spoon in 1/4 cup of the batter for each pancake
Cook until bubble for on top of each
The flip and cook the other side
Repeat with the remaining oil and batter
Serve immediately
