3 cups all purpose flour
3 cups granulated sugar
1 tsp salt
1 Tbsp baking soda
1 Tbsp cinnamon
1 tsp nutmeg
1 and 1/2 cup corn oil
4 eggs, beaten
1 Tbsp vanilla
1 cup chopped pecans
2 cups zucchini, grated
Frosting:
8 ounces cream cheese
6 Tbsp butter
3 and 1/2 cups powdered sugar
1 tsp maple extract
1 tsp cinnamon
Sift dry ingredients in a bowl
Add oil, eggs, and vanilla. Beat well
Fold pecans and grated zucchini into batter
Grease and flour two 9 inch layer cake pans
Line with wax paper
Pour batter into pans
Bake at 350 for 30 minutes until cake is done
Cool on a rack for 10 minutes. Remove from pans
Continue to cool rack
Make Frosting:
Beat together crean cheese, butter, powdered sugar and maple extract until creamy
Frost top, middle and sides of cake
Sprinkle with cinnamon
