Winter Turkey Soup
Serves 2
4 cup reduced fat chicken broth
1 cup apple juice
1/2 cup peeled sweet potatoes
1/2 cup cubed peeled turnips
1/2 cup diced celery
1/2 cup diced onions
1 clove garlic, minced
1 Tbsp parsley, chopped
2 tsp dried thyme
1/2 tsp dried rosemary
1 cup broccoli florets
1/2 cup baby lima beans
1 cup diced cooked turkey
Shredded swiss cheese for garnish
Combine the broth and apple juice in a 4 quart sauce pan
Place over medium heat
Add the sweet potatoes, turnips, celery, onions, garlic, parsely, thyme and rosemary
Cover and bring to a boil
Reduce heat and simmer for 30 minutes
Add the broccoli, lima beans, and turkey
Cover the mixture and simmer until the vegetables are tender, about 20 minutes
Garnish with the cheese
