TexMex Turkey Rice and Lime Stew
Serves 2
1 cup reduced fat chicken broth
1 cup low-sodium tomatoes, chopped
1/4 cup minced onions
2 jalapeno peppers,seeded and minced
1/8 tsp cumin
1/8 tsp chili powder
1/4 cup cubed cooked turkey breast
1 cup frozen corn
1 Tbsp line juice
1/2 cup brown rice, cooked
1/2 cup shredded reduced-fat Monterey Jack Cheese
2 Tbsp crushed tortilla chips
In a 3 quart saucepan, combine the broth, tomatoes, onions, peppers, cumin, and chili powder
Bring to a boil
Reduce the heat and simmer for 10 minutes
Stir in the turkey, corn, lime juice and rice
Simmer until heated, about 5 minutes
To serve the stew, ladle it into bowls. Sprinkle with the Monterey Jack and chips
