Donna's Favorite Recipes



Swordfish with Green Peppers
4 servings

1 and 1/2 pounds swordfish
4 tablespoons olive oil
2 small onions, sliced
2 small cloves garlic, minced
2 tomatoes, seeded and chopped
2 green bell peppers, seeded and sliced
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup liquid - either water or broth or white wine

Cut the fish into 4 serving pieces

In a heavy large skillet, saute the onion and garlic in the oil until softened

Stir in the tomatoes, green peppers, salt, pepper and liquid
Cook over medium heat, stirring occasionally, for 10 minutes

Add the swordfish. And cover
Cook over simmering heat for 8 to 10 minutes until the swordfish is cooked
Serve fish, with vegetables and juice spooned on top
