Split Pea Soup
3 cups dried green split peas
8 cups water
1 bay leaf
1 Tbsp olive oil
1 cup minced onion
3 cloved garlic, crushed
1 cup minced celery
1 small potato, chopped
2 cups sliced carrots
1/4 cup dry red wine
1/4 tsp dry mustard
1/4 tsp thyme
2 Tbsp white wine vinegar
1 cup chopped tomatoes
1/4 cup chopped parsley
Salt and pepper to taste
Place split peas, bay leaf and water in a large kettle. Bring to a boil, lower heat and simmer
for 3 to 4 hours, covered
Removed bay leaf
In a skillet, saute onion, garlic, celery, potato and carrots and olive oil until tender. If
needed add a small amount of water
Add mixture to split peas and simmer for 15 minutesV
Add red wine, mustard and thyme. Simmer another 10 minutes
Remove from heat
Add white wine vinegar, tomatoes and parsley
Season with salt and pepper to taster
