Southern Pork Chops and Sweet Potatoes

4 thick pork chops, approx 2 pounds
Salt and pepper
3/4 cup all purpse flour
2 Tbsp cooking oil
4 preccoked sweet potatoes, (approx 1 and 1/2 lbs), cut into cubes
2 Tbsp butter
1/2 cup red currant jelly
1/2 cup orange juice
2 Tbsp lemon juice
2 tsp grated lemon rind
1 tsp dry mustard
1 tsp paprika
1 tsp grated fresh ginger
Sprinkle pork chops with salt and pepper. Dredge in flour
Heat oil in a heavy skillet. Add the chops. Brown over medium heat on both sides
Arrange the browned pork chops andd sweet potatoes in a shallow baking dish
For sauce, in a 2 quart saucepan, melt the butter. Add the jelly, lemon juice, orange juice,
lemon rind, mustard, paprika and ginger. Simmer for 3 minutes.
Pour 3/4 of the sauce over the pork chops and sweet potatoes
Bake at 350 degrees for about 40 minutes or until pork chops are no longer pink. Baste during the
baking with the remaining sauce.
Before serving, sprinkle wiht shopped parsley and marjoramm.
