Salmon Burgers
Serves 6

2 pounds, salmon skinless and boneless
1/2 cup fresh bread crumbs
1 egg, beaten
2 scallions, sliced
Grated zest of one lemon
2 Tbsp chopped chives
1 Tbsp minced garlic
1 Tbsp olive oil
1 tsp red wine vinegar
1 dash Tabasco sauce
Salt and pepper to taste

Chop the salmon with a knife
Place in a food processor and pulse to acheive a coarse texture. Do not over-process or salmon will get mushy

Combine the salmon with remaining ingredients
Form into 6 patties

Preheat coals for grilling. Brush coals with vegetable oil

Grill the burgers over hot coals for 3 minutes per side, until cooked through
Turn carefully

Serve the burgers on bun, with toppings of your choice
