Rosemary Chicken
Serves 4
Chicken, cut into pieces - 3and 1/2 pounds
2 Tbsp olive oil
1 onion, slivered
1 Tbsp minced garlic
1 spring rosemary, minced
Salt and pepper taste
2/3 cup marinara sauce
1/2 cup water
Rinse the chicken pieces. Pat dry
Arrange in a shallow baking dish
Place the olive oil in a skillet over low heat. Add onion and cook about 5 mintes until onion
is soft
Add the garlic and cook, 5 more minutes, stirring often
Add the minced rosemary leaves
Preheat oven 375
Toss the chicken with the onion mixture
Season with salt and pepper
Top with marinara sauce
Add the water to the bottom of the pan
Bake until the chicken is cooked through, about 60 minutes, basting often
Serve the chicken on a platter and spoon remaining sauce on top
