Crust:
1 and 1/2 cups chocolate wafers, finely crushed
1/3 cup butter
1/2 Tbsp granulated sugar
Filling:
2 squares sweet chocolate (one ounce each)
2 packaged cream cheese (8 ounces each)
4 eggs
3/4 cup sugr
3 tsp instant coffee
Dash salt
Garnishes of your choice: either chocolate cookies, Berries or chocolate leaves
Crust:
Combine wafer crumbs, butter and sugar.
Butter sides and bottom of an 8 inch springform pan
Press crumb mixture evenly onto bottom of pan
Melt chocolate over hot water (not boiling, just hot). Stir until smooth
Beat cream cheese until smooth
Add eggs to cream cheese. Gradually add sugar. Mix until well blended
Add melted chocolate, instant coffee and salt. Stir until blended
Turn filling into prepared pan
Bake at 350 for about 40 minutes until cake is set
Let cheesecake cool for about an hour. Cover and chill for at least 4 hours
Remove sides of pan. Garnish as desired
