Donna's Favorite Recipes



Mexican Wedding Bells
Makes 4 1/2 Dozen

1/2 cup pecan halves
1 cup powdered sugar
pinch salt
1 cup unsalted butter
1/2 teaspoon vanilla extract
1 and 3/4 cup all purpose flour
Topping: 1 and 1/2 cups powdered sugar

Preheat oven to 350
Place pecans on a cookie sheet. Bake, stirring occasionally, for 10 minutes or until lightly brown. Let cool

Soften the butter
Grate the nuts so they are a fine powder
In a medium bowl, whisk together the flour, salt and grated nuts
In a mixing bowl, at low speed, gradually beat in the flour mixture.

Scrape the dough in a bowl, cover tightly and refrigerate for one hour

Measure the dough into tablespoon sized portions.
Roll into 1 inch balls
Place the balls 1 and 1/2 inch apart on cookie sheets
Bake 15 or 20 minutres or until the cookies are barely brown
Rotate the cookie sheets for even baking

Cool the cookies on the sheets for 2 or 3 minutes
Use a metal spatula and lift cookies from sheets
Roll the cookies in the powdered sugar while still hot
Cool completely
