Lentil Sauce over Pasta
4 servings
2 tsp olive oil
2 cups chopped onions
1 cup diced carrots
1 cup chopped celery
2 garlic cloves, minced
1 (14 and 1/2 ounce) can diced tomatoes
1 cup dry lentils
1 tsp dried oregano
1/2 tsp dried thyme
Dash black pepper
2 cups water
2 tsp soy sauce
1 and 1/2 cups uncooked orzo pasta
Heat oil in saucepan over medium heat until hot
Add onions, carrots, celery, garlic and cool 7 minutes, stir often, until tender
Stir in drained tomatoes and all remaining ingedients - except tomato liquid and orzo
Bring to a boil
Reduce heat, cover and simmer about 30 minutes until lentils are tender
In a seperate saucepan, cook orzo according to package directions (omit salt)
Drain
Stir reserved tomato liquid from can into sauce, cook until heated
Serve over orzo
