Lemon Herb Couscous
Serves 4
2 cups water
1 and 1/2 cup couscous
2 Tbsp lemon juice
1 Tbsp olive oil
Grated lemon zest from 2 lemons
1/4 cup chopped mixed herbs - chives, mint, parsley
1 medium carrot, peeled and diced to small pieces
Salt and pepper to taste
In a medium sauce pan, bring water to a boil. Remove from from heat
Site in the couscous, cover and let rest for 5 minutes
Uncover and fluff with a fork
Remove to a bowl
Add the lemon juice, olive oil, and lemon zest, stir with a fork
Stir in the herbs and diced carrot
Add salt and pepper to taste, stir
