Donna's Favorite Recipes



Green Rice Casserole
6 Servings

3 cups cooked rice
1/4 cup melted butter
1 Tbsp soy sauce
1 Tbsp white wine vinegar
1 tsp dry thyme leaves
1 tsp molasses
1/4 tsp pepper
1 package - 10 ounces - frozen chopped spinach, thawed
1/4 cup chopped green onion
3 cups shredded cheddar cheese
4 eggs
1 cup milk

Cook rice

Add melted butter, soy sauce, vinegar, thyme, molasses and pepper to the cook rice

Squeeze the spinach to get rid of the water
Add spinach to the rice.
Add onion, cheese, eggs and milk to the mixture
Mix well

Spoon mixture into a 2 quart baking dish

Bake at 300 for 50 minutes, or until center is no longer liquid

Serve hot
