1 tablespoon instant espresso powder
1 tablespoon hot water
2 cups all purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup room temperature butter
1 cup sugar
1 egg
1/2 cup finely chopped walnuts
Dissolve espresso powder in hot water. Cool and set aside
Sift flour, baking powder and salt together
Cream butter in a large bowl. Gradually add sugar, beating until fluffy
Add egg and cooled espresso mixture and beat well.
Blend flour mixture into wet mixture
Stir in the nuts
Divide the dough into half. Shape into 2 inch cylinders
Wrap in wax paper and chill.
When ready to bake, preheat oven to 375
Grease baking sheets
Slice cylinder into 1/4 inch rounds and arrange on prepared sheets
Bake until firm or lightly brown. About 8 to 10 minutes
