Donna's Favorite Recipes



Country Omelette with Sausage
4 servings

6 eggs
2 tablespoons water
Dash salt
Dash black pepper

1/2 pound pork sausage
1 chopped onion
1 tablespoon butter
2 medium potatoes - shredded
Fresh parsley for garnish
Red bell pepper slices for garnish

In a large skillet, saute pork sausage until cooked
Add the onion and butter. Saute a few minutes until onions are soft
Add the shredded potatoes. Stir well and saute until potatoes are soft

Beat together the eggs, salt, pepper and water
Pour egg mixture over the sausage and potatoes. Cook over medium heat
As eggs begin to set, push cooked portin towards center of pan

When eggs are light brown and almost set, sprinkle with parsley
When done cooking top with red bellpepper slices
