Donna's Favorite Recipes



Chicken and Vegetable Couscous
Serves 4

2 cups cooked chicken breast, skinless, cut into pieces
1 large onion, chopped
1 Tbsp butter
1 cup couscous
1 quart water
1/2 cup diced radishes
1/2 cup sliced green onions
1 cup cooked chick peas (garbanzo beans)
1 large tomato, diced
1/2 tsp creole seasoning
1/2 tsp salt free seasoning

Saute onion and chicken in butter for about five minutes
Add one quart water
Bring to a boil and add chick peas
Cover and heat through for about 10 minutes
Add couscous and seasonings
Cover pot and set to the sided (not on oven) for about 10 minutes
Stir in radishes, green onions and tomato
Serve immediately
