Beef Stuffed Green Peppers

4 large evenshapped green peppers
1 lb lean ground beef
1/2 cup cooked rice
1 onion, chopped
1/2 cup chopped celery
1 egg
3 Tbsp half and half
3 Tbsp chopped parsley
3/4 cup tomato sauce
1/2 tsp salt
dash ground black pepper
dash cayenne pepper
Wash peppers. Cut tops off at stem ends. Remove seeds andmembrane. Reserve the tops
In a large mixing bowl, combine the ground meat, the rice, onion, clery and egg. Blend well
Add half and ahlf, parsley, tomato sauce, salt and black & cayenne pepper. Mix to blend well
Place green pepper in an oven proof dish, large enough to hold peppers upright
Fill green peppers with meat mixture, mounding a little on top of each. Filling will shrink
while baking
Bake at 400 degrees for about 35 minutes or until filling is set and cooked through and peppers
are tender.
Serve immediately
