1 and 1/2 pounds stewing beef, cut into 2 inch pieces
2 Tbsp olive oil
1 pound mushrooms, quartered
1/4 cup red wine
1 and 1/2 cups beef broth
1 cup sliced green onions
1 Tbsp minced garlic
2 Tbsp tomato paste
1/2 tsp dried thyme leaves
1 cup tomato puree
salt and pepper to taster
Heat the oil in a large sauce pan. Add the beef. Brown well on all sides.Remove from the pan
Set aside
Saute the mushrooms for a few minutes. Remove from pan. Set aside
Add the red wine to the hot pan. Scrape the pan with a wooden spoon so everything is mixed.
Add the beef broth, sauted mushrooms and the rest of the indredients to the pan.
Stir well
Bring to a boil
Add the beef
Reduce to a simmer. Cook for 40 minutes or until the beef is tender
Serve over cooked egg noodles
