Bean soup
10 ounces of dried mixed beans
4 large tomatoes, peeled and chopped
Juice of 1 lemon
4 large carrots, peeled and chopped
3 large baking potatoes, peeled, cooked, and cut into small pieces
1 tsp sugar
1/2 tsp garlic powder
3/4 tsp paprika
1/8 tsp pepper
3/4 tsp salt-free seasoning, if desired
Bring 6 and 1/2 cups of water and the beans to a boil. Turn off heat and let stand one hour
Add the remaining ingredients except for the tomatoes and cooked potatoes
Bring the mixture to a boil again, turn down heat and simmer. Cook for about 1 and 1/2 hours or
until the beans are tender Add more water if needed
Add tomatoes and potatoes. Simmer for 30 minutes
